If I had to pick a favorite, Mexican food would go hand in hand. Ever since my first Mexican meal, I’ve loved it and eaten it as much as I could. My favorite dish is enchiladas, which for me is the epitome of comfort food. There’s something special about tortillas filled with chicken, cheese and vegetables, topped with a spicy sauce and covered in cheese. Since going keto, I’ve been trying my hardest to make a version of this and have been eating it on repeat ever since!

I have been wanting to share a keto enchilada recipe for a long time. It is very quick and easy to prepare and the taste is incredible. Now, these enchiladas may sound super fancy, but I promise you, they are a foolproof recipe. No grains and no sugar required, but you’ll never tell. They’re spicy, smoky, sweet, and cheesy, and the best part is how customizable they are—fill them with anything and everything!

I had some friends over for a big Mexican dinner and no one believed me when I said these were low carb. They tasted just like traditional enchiladas, if not better!

Start by making the enchilada sauce. In a high speed blender, add all ingredients and blend until well combined. Pour it into a large bowl and set aside. Then prepare the enchilada filling. In a non-stick pan, add olive oil. Once hot, add onion and bell pepper and fry for 2-3 minutes until the onions start to brown. Add shredded protein of choice (I used chicken breast), followed by taco seasoning, and roast until chicken is cooked through, 8-10 minutes.

Now prepare the enchiladas. Place on a low carb tortilla on a flat surface. Cover the center with enchilada sauce before adding the filling. Sprinkle grated cheese on it and put it on both sides to the middle of the tortilla. Insert a toothpick to hold it in place and place it in a large baking dish. Repeat the process until all the filling ingredients are used up. Spread with remaining enchilada sauce and top with more cheese.

Finally, bake the enchiladas for 10-12 minutes or until the cheese is melted. Remove from the oven and serve immediately.

To freeze: Remove enchiladas from baking dish and place in a shallow dish. Store the container in the freezer for up to 6 months.
