Main Course Carrot Recipes – Roasted carrots in honey (or candied carrots, as we like to call them) is a sweet, tasty and healthy vegetable side dish. Easy-to-make carrots are coated in a honey glaze and then baked until soft and caramelized. They are totally addictive!

Guys, these roasted carrots in honey. I don’t even know what to say except, “Why don’t I have a huge plate of them in front of me right now?” Seriously, they are SO GOOD!

And yes, I know we’re talking about carrots here. I love carrots in general, but you won’t find me gushing madly for them. I mean, carrots are usually just… you know, carrots.

Those super tasty and beautiful looking honey roasted carrots you see there are also EASY to make. Like, crazy easy. It almost makes no sense that something so simple tastes so good. Now we are bowing down to these sweet honey glazed carrots.

This is serious, guys. You don’t even need a recipe for this. Of course, the actual recipe is at the bottom of this post. But you know, you don’t really need it.

The first tip is about making your life easier. If you have a large ovenproof pan, you will only be able to make them in one pan. Read: eat less! This is the pan I have and love. A cast iron skillet would work well too!

That! At least I think so. But we love spices. When I make them, I always use 1/4 teaspoon of cayenne pepper. It gives the carrots a nice hint of spice. The sweetness of the carrots softens the spice so it’s not overpowering.

However, if you have people at the table who are quite sensitive to spices, simply reduce the amount of cayenne pepper to 1/8 teaspoon. You can even leave it out entirely if you know the spices won’t go over well on your table.

These tasty nuggets go with almost anything, but I like to keep things pretty simple when I serve them. I find that serving a savory main course is the best option. Something like honey garlic chicken (although delicious) ends up being too sweet next to these carrots.

In the picture below, I made pork loins seasoned with Primal Palate’s meat and potato seasoning and roasted together with carrots for 20 minutes.

This Roasted Carrot Casserole is one of those recipes. We found it in the Maine Bicentennial Community Cookbook (affiliate link) – published this year as part of Maine’s 200th anniversary of statehood. Two hundred recipes were selected for the cookbook after a call for recipe submissions from everyone with a connection to the beautiful state of Maine. This complex roasted carrot is one of our favorites (so far) from the cookbook.

How to make this delicious carrot casserole? Boiled and coarsely mashed carrots are mixed with sautéed onions and peppers, then baked with eggs and milk – giving this roasted carrot concoction a nice, creamy consistency. (The original recipe called for green peppers, but we used red peppers instead – either will do!) The sweet taste of the carrots is nicely balanced by the peppers and onions, and this is a really nice, savory side dish that’s sure to become a family favorite. Can you prepare this casserole in advance? Absolutely—and that’s one of the reasons why this Roasted Carrot Casserole would be perfect for Thanksgiving. You can mix it in advance and then bake it for an hour before serving. It also reheats well – so when there’s no oven space on Thanksgiving – you can roast it ahead of time and then reheat it while the turkey is resting after it comes out of the oven.

After the carrots have cooled, return them to the container in which they were cooked and fill one ladle with the mixture from the other container. This will help you mash the carrots.

Carrot Salad Recipe

Use a potato masher and mash like lumpy mashed potatoes. You want some chunks, not mashed into a puree.

Add the carrot and egg mixture to the pan with the onion and pepper and mix until all the ingredients are combined.

The dish can be prepared a day in advance and baked an hour before serving. Leave the mixture at room temperature for about 15 minutes before baking if you prepared it the day before and cooled it in the refrigerator.
