This creamy vegan pasta is my go-to recipe when I want comfort food but don’t have hours in the kitchen. It takes just over 20 minutes to make from start to finish, so it’s the perfect weeknight meal. All you have to do is boil the pasta, mix the sauce, saute the onions and broccoli and mix it all together. Then you can sit down to eat warm bowls of noodles and veggies topped with this super creamy vegan pasta sauce. Although this sauce looks like a rich, creamy or cheesy sauce, it’s actually a tangy, juicy blend of white beans, lemon juice, and nutritional yeast. So, not only is this recipe quick and comforting, but it’s also healthy!

For a stew or stew, use smaller quantities, arrange them in 8- or 10-ounce pots, and place them on the stove to slowly simmer to perfection while you’re at work. With this recipe, you’re basically treating your slow cooker like a small steamer.

We love it here with a quick soy sauce topped with kale. Have leftovers? Wrap this combination of tempeh and vegetables in a whole wheat wrap for the perfect take-out lunch.
