Kale is versatile, it’s delicious, and it just happens to be one of the healthiest vegetables out there. You can imagine that I mix them in smoothies, throw them into pasta, and cook them in soups every chance I get!

When I cook in advance, I usually use one of the previous recipes as a starting point. Think of them as binders – they can be pasta dishes, dishes, and more!
On its own, lemony sautéed kale is a healthy side dish, but it’s also a great addition to great recipes. Toss with pasta, add to a frittata, or put on a pizza. The options are endless!
This creamy pesto is my winter favorite over classic basil pesto. Toss it with pasta, put it on soup, put it on a sandwich, put it on pizza…you can’t go wrong.
We’ve all had classic salads that are hard and dry, but don’t worry – you won’t find anything like this here. Instead, these versatile salads are packed with interesting flavors and textures. Tip: they both pack well if you make them ahead of time (you can even add the dressing!), so they’re great recipes to pack for lunch.
Garlic Butter Rice With Kale

Here is another method that I already use in two ways. I add the sauce to the bottom of the dish and put the sweet pesto on top. See how green the pesto is? I make it with pistachios instead of pine nuts to make it even more crunchy!
