This healthy eggnog recipe is one of our favorites. This is a simple, straightforward breakfast with bacon, eggs, vegetables, and cheese. No extras (milk, bread, potatoes, etc.). Just a bunch of protein and nutrients to start your day off right!

You can make it, divide it into individual portions and enjoy it throughout the week. It can even be completely customized to your ice cream and flavor preferences!

Whenever I need a “clean out the fridge” meal, I usually make some kind of eggnog recipe like this eggnog recipe (or this easy frittata recipe, egg salad, cauliflower or hash browns). The first step in making this egg roll recipe is to prepare the ingredients. Let’s discuss the ingredients and possible substitutions for this dish.

Saute the bacon, onion, and garlic over medium heat until the bacon is just browned, the first step in this recipe. Stir for a few minutes.

Note: For a vegetarian version (without the bacon), add 2 TBS olive oil to the pot and sauté the onion and garlic until the onion is soft, then add the remaining vegetables.
