Ground beef is my go-to protein when it comes to feeding my family. It has so many uses, especially in Middle Eastern cuisine, and is usually one of the easiest meats to cook. Over the years, I’ve also found these to be the most kid-friendly (probably tied with chicken). Here are some reasons why I love it:

For many traditional recipes, beef is regularly used as Arabic/Middle Eastern recipes tend to be on the greasier side for added flavor. Fat gives food flavor, and in general, a higher fat percentage results in tastier meat. However, I prefer to cook Arabic food these days and take a much healthier approach by sticking to extra ground beef and adding fat myself (by adding olive oil to it, for example).

Choosing the right type depends on you and your preferences, as well as the dish you are cooking.

You will find that most Middle Eastern beef recipes use similar seasonings. Mine is salt, pepper, allspice (not a blend of spices) and cinnamon. This is my favorite spice blend and in my opinion it is suitable for most applications. You can also season it with salt, pepper and Lebanese seven spice mix.

There are several different ways you can defrost ground beef, and I use all of them depending on how much time I have and whether I have planned ahead. I will list them below in order of favorite.

This is easy enough and straight forward. Just take the ground beef out of the freezer, put it on a plate (so that nothing goes over the fridge) and leave it overnight in the fridge. This is the best method of defrosting and the method I have used the most. But sometimes I forget… and that’s where the next ones come in.

If I remember in the morning that I want to use ground beef, I take it out first thing in the morning and put it in a closed plastic bag and put it in cold water . I usually have to put a plate on top of it to keep it submerged because it tends to float to the top. This method takes 1-2 hours and freezes the beef evenly.

My last option is the microwave when I need to use ground beef within a few minutes to make a quick meal. The reason I don’t love it is because it leads to uneven defrosting and some of the beef around the outside starts to cook while the middle still frozen. To work around this issue, I usually freeze it for 1-2 minutes at a time, remove it and scrape the defrosted beef and place it in another plate, then add the remaining beef. I repeat this until the whole thing is there. defrost.

Dawood Basha is a Syrian and Lebanese dish that is apparently named after a famous “basha” which is from the Turkish “pasha” and is a title given to figures of special status, similar to Lord or Sir. It’s basically a Middle Eastern meatball stew that can be made with just meatballs or with additional vegetables, you can consider it a sister stew to Eggplant Casserole with vegetables and a similar taste.

What makes Dawood Basha SO good is that the meatballs are flavored with middle eastern spices, and then the stew is also packed with flavor from the onions, garlic and peas and potatoes. Everything is covered in a tomato sauce flavored with seven spices and pomegranate molasses, and the result is simply the most comfort food you will ever have. I like to serve it with rice, or you can even enjoy it with some bread.

I’m not sure who this Dawood Basha is, but I’m fine with eating this stew pretty regularly in his honor.
