In another life, tuna noodle casserole is a family favorite. It’s quick, easy and delicious. I do it better when the kids are growing up. I can easily whip it up with a can of tuna, a can of cream of mushroom soup (or cream of chicken soup), and some egg noodles. Mix it all up, pop it in the oven with some mashed potatoes on top and you’re good to go, right? The kids love it. I had to make it in large quantities because TP109 had to move it and there wasn’t any left for tomorrow so I took some to work for my lunch. LOL
I know I’ve said this in other posts, but I feel like I should mention it again… TP LOVES casseroles! He was very happy every time he saw me or Monkey digging for our food.
We don’t have a lot of dishes, but we keep them in the back of a small cupboard where we have to dig up a hill to get to them. His reaction is reminiscent of the famous youtube video of a cute dog who goes crazy when his Gumby doggy toy comes alive.
Healthy Tuna Noodle Casserole (from Scratch!)
If you haven’t seen it, it’s worth seeing, search youtube for “Man who dresses up as a child’s favorite toy”. Once you look at that, you will understand how much TP loves casseroles. LOL
TP109 is like, “You make a casserole? You make a casserole, right? I think it’s time for a casserole blog today; that’s what you do, right? Don’t let me get excited about a casserole.” , and take the bag out, OK?”
It’s really funny how much he enjoys going through the casseroles. It lights up like a Christmas tree.
Mixing in a whole plant-based “Tuna” Noodle Casserole is something I’ve been mulling over for a while. The original version (not Vegan, not WFPB) is quick and easy. I know it’s going to take a little work to put this cool style together, but I’m up for it.
Cream Of Mushroom Casserole
This WFPB “Tuna” Noodle Casserole is not only healthy, it’s super delicious! It is well worth the extra time and effort. TP109 is crazy! He loves her.
It’s easy to find WFPB-friendly pasta in most grocery stores. I would recommend using WFPB fettuccini pasta to mimic traditional egg noodles, but any WFPB pasta will work if gluten isn’t an issue.
However, we couldn’t find gluten-free WFPB fettuccini pasta and I really wanted to mimic the texture of the egg noodles in a traditional tuna noodle casserole. So, this is what we did.
I bought a 9-oz. package of Delallo Gluten Free Lasagna noodles, cooked thoroughly, then cut into 1/8 inch pieces, then placed on a plate. They were cooked in the sauce when we put it in the oven. We are very happy because it worked well.
Easy Chicken Noodle Casserole
It’s also easy to find WFPB bread crumbs or make them. All you have to do is toast some WFPB-friendly bread in the oven, then process it in a food processor to create bread crumbs. For those of us trying to find a WFPB Gluten Free bread to make bread, that’s a whole “nuther” story.
So I got creative with the monkey. We take one of our leftover Quinoa Flatbreads, bake it in the oven until it’s very crispy, then toss it with other ingredients and mix it until it looks like bread crumbs. WOOT! WFPB Gluten Free Bread Crumbs!
For our gluten-free WFPB friends, we don’t expect anyone to do the work to get a nutritious flatbread, but, if you have any leftover quinoa flatbread, you can make a flatbread that gluten free this way. . OR, you can leave the bread slices completely in the bowl. It does not affect the flavor of the casserole; it adds to the “look” of the traditional tuna noodle casserole.
Frozen vegetables work well for this recipe because it eliminates drying and chopping fresh vegetables before adding them to the casserole. We use a 16-oz. bag of mixed vegetables (corn, peas, green beans and carrots) and 14.4 oz. bag of frozen broccoli and cauliflower florets. You can put them frozen in cream sauce, then heat them up.
Easy Summer Veggie Casserole Recipes
One thing I noticed was that in the frozen broccoli and cauliflower bags, the florets didn’t come together very well, which was fine, but it drove me crazy. Some are large, while others are mature.
When I put them in the cream sauce, as soon as they are hot, I take some of the larger florets with a slotted spoon and cut them into small pieces, and throw them into the sauce. This way, I don’t have any veggie mountains in my casserole. LOL
Although it is desirable to use enough pasta (or more pasta than the recommended 9 oz amount). This recipe is more veggies than “noodles,” but if you’re looking for a noodle recipe, then reduce the amount of veggies or increase the amount of cream to ensure a delicious creamy texture. sweet and not the end of the dry. -top of the casserole because your pasta absorbs all the water of the cream.
When it comes out of the oven, it looks like God. I mean, I can hear angels singing in my head. “Aaaahhhhhhh” LOL So good. TP loves it. The only thing that upset him was that he wanted to eat.
Creamy Chicken Noodle Casserole
Mentally, it must have been lost, but the man is a human vacuum cleaner! If you don’t know it, then you won’t understand. Although TP109 is a small man, 5’6″ and 135 pounds wet, he can eat like a 350-pound boxer. The man can really take it out. I mean seriously…he could have eaten the whole bowl by himself (and trust me, he totally wanted to), he loves to eat. It makes me so sad that he can eat so much and not benefit pounds. LOL
