Noodle Kugel Recipes Savory – [Guest post by Deb’s mom!] Last year I briefly told you how my mom jokes that she married my dad for her noodle kugel recipe. But then, as if just to be ruthless, I made my own spin with cream cheese and dried cherries. Was it delicious? Oh, yes. Are you long enough to get a taste of the real deal? Certainly so. Please welcome my mom herself here today in her first guest post and finally share with you the kugel noodle recipe you owe me.
Growing up in a German family, I had a lot of noodle puddings. Shortly after I got engaged to my now-husband, we had a family buffet dinner where everything was homemade and beautifully displayed. It was at their club that I first encountered noodle pudding. I thought it was the best food I had ever tasted.

I asked my relative there for the recipe. There was a lot of commotion at the party that day, and as I’ve been telling my daughters for the past 30 years, my aunt told me that I had to marry my current husband to get the menu. The rest is history.
Vegan Sweet Noodle Kugel — The Yummy Vegan
I’ve stated many times that if I was stranded on an island and could only take one meal with me, it would be a version of noodle pudding. You be the judge.
2 sticks (1 cup or 8 ounces) melted unsalted butter or margarine (Mom uses 1 1/2 sticks of butter)
In a very large bowl, beat the eggs until fluffy. Gradually add sugar, then cheese, cottage cheese, margarine or butter and vanilla. Stir in the drained noodles.
Pour into a 9×13 inch pan. Bake for 1 1/2 hours or until the kugel is set. If using cherry pie filling as a topping, chill it for an hour and then bake it for an additional 30 minutes.

Note: Your baking time may vary, of course. Check the readiness in an hour and go from there. Our oven, always running cold, took about two hours to cook. At home, my mothers oven does it in an hour.
About the Topping: Well, apparently the original version of this recipe has a cherry pie filling (of! a! can!), and apparently my dad says that some parts of my family still make it that way. I haven’t seen it yet and my mom has never used it. If you want to try a version, but avoid the secret stuff in a can, cherry pie filling can be made with a bag of frozen cherries that are cooked in a pot with half a cup of water for about 10 minutes. . Mix 1/2 cup of sugar with 1 teaspoon of cornstarch and stir them into the pot. The mixture will thicken in a few minutes. Cool before use.

Eggless noodles may be hard to find, but they do exist. I always get them at the local grocery store. They sell a store brand wide ribbon noodle and that’s all you need for this recipe.
Savory Vegetable And Noodle Kugel
Usually a kugel is the weight of an egg. So we replaced the egg with a mixture of whipped aquafaba and starch to bind the vegan kugel together, but keep it light and slightly fluffy.
We use a combination of tofu to make a very convincing vegan cottage cheese and add some onions and spices to round out the kugel.
If you’re in the sweet Kugel camp, I can’t help you there. I’ve never been a fan, but I’m sure you can adapt the base of this recipe to make a really tasty sweet kugel.

Kugel or noodle pudding is an adaptation of a recipe that is itself an adaptation. I’m not sure what it does, but I credit my friend Sarah Struble. She took Joan Nathan’s recipe, adapted from the Larchmont, New York Temple Community Cookbook, and made it truly amazing. The original recipe was called “Exciting Baked Treats,” but I find this version much more (exciting, that is.)

Savory Noodle Kugel With Zoodles For Hanukkah
Joanne changed the name to “Exciting Stream Kugel” and kept the two “secret” ingredients of the recipe, Worcestershire sauce and Tabasco. Her version of the New York Times cooking program is behind a paywall, so I won’t bother linking to it.
Sarah adapted Joan Nathan’s version by sauteing the onions before adding them and doubling the amount of Worcestershire sauce, Tabasco and Parmesan cheese.
This delicious Kugel Noodle is not the prettiest dish in the world. The end result is what I would call a “pot, stone, and homely charm.”
And generally, I’m on Team Sweet when it comes to kugel. But as good as it looks and full of onions and garlic rather than sugar, I still enjoyed this delicious version. And my beloved also, who made it a scarf.
Noodle Kugel — Gateau
Kugel is a generic term for “pudding” in Ashkenazi Jewish cooking. Noodles or loxen kugel usually have dairy in them, like this one. Since then, they are as diverse as the people who make them. It’s simple, easy and delicious. Despite my preference for sweet, this kugel is a winner in my book.
You can use another 10-cup pan. If you use a larger size, the kugel will be too thin, A smaller pan will give a thicker kugel that takes longer to cook and is not as thick because it has less surface area. Check out this handy guide for ideas on similar sized trays. While kugel is often sweetened with cinnamon and often raisins, this is not. It takes more after potato kugel, which falls from what I have seen, more on the savory side. Although it seems heavy at first glance, it is not. The noodles become soft and fluffy. With these on the table, you can give up trying to cook potatoes at the last minute, because no one misses them. – Thirschfeld

It can be sweet or savory, and this one definitely goes the sweet route. With sour cream, cottage cheese, Gruyère cheese, and seasoned breadcrumbs, this kugel is filling and comforting, and the perfect accompaniment to any holiday or celebration. This kugel is a great dish and the recipe is great as is, but you can also add raisins or dried cherries if you’re after a bit more of a sweet taste, as well as any spices you like, like cinnamon ground or fresh. chopped walnuts. Add some fresh herbs if you have them on hand. The best part about experimenting with this recipe is that it couldn’t be easier to make and doesn’t require fancy equipment or special ingredients. Just toss the cooked egg noodles with a little oil, add a mixture of sour cream, egg, cottage cheese, cottage cheese and chopped onion and let the kugel cook in the oven for about half an hour.
