Either! If you want to eat sesame noodles hot, I recommend keeping the cucumber separately and adding it after heating.
Cucumbers are traditional with sesame noodles, but I think just about any vegetable (and/or protein) would be good. carrot. bell pepper. Broccoli. Green onions. Shrimp. Salmon. Tofu. Tempeh. Nuts.
