I’ve previously shared stories where Dozer was randomly recognized on the streets by readers (ah, it makes me proud!) and the odd occasion when I’ve been recognized. Always in a state of disarray. I am waiting for the time when it will happen when I will be stopped for an evening.🤞🏼

Sweet & Spicy Hot Chili Chicken Noodles

Well, when 3 complete strangers in 2 weeks tell you that the Asian beef bowls are one of their favorites because it’s so delicious yet quick and easy, it triggers a thought –

I hinted at a cheeky little tip that makes this ramen noodle recipe even quicker than you’d expect—and here it is:

Yes that’s right, the Asian beef ramen noodles are made in one pot!!! Sure it saves on washing an extra pot to cook the noodles separately, but for this recipe, the more important factor is that the starch in the noodles acts as the thickener for the sauce (which has no corn/corn or other thickener).

So the recipe goes down – 4 minutes for the onion and beef, 2-3 minutes for the noodles,

Dan Dan Noodles Recipe

The beauty of this technique is that it should be a super quick recipe because the noodles cook in 2-3 minutes. Any more and they become too soft!

This is a very adaptable recipe. I have used onion, garlic, ground beef (chopped) and bean sprouts as it requires minimal chopping. Finely sliced cabbage would be an ideal substitute for the bean sprouts, otherwise carrots cut into matchsticks, baby spinach or even normal spinach, or even finely sliced kale. Toss these in when the bean sprouts are added, just to wilt.

If you use other vegetables that need to be cooked for more than boiling water, such as peppers, zucchini or mushrooms, cook them first and remove from the pan (otherwise they release too much liquid when the noodles cook, so you end up with too much water). Proceed with recipes and throw them in the end.

Any instant noodles or ramen noodles will work fine because we discard the soup seasoning mix. You can also buy just the noodle cakes (no seasoning) in larger packs of 5+.

If you don’t have instant noodles (or you really can’t get past your dorm days), these Asian beef ramen noodles will work just fine with any other type of noodle. Dried or fresh, rice or wheat/egg noodles.

But honestly, I ask you – does this look like any instant ramen noodles you had in your dorm days? 😉

Quick Asian Beef Ramen Noodles

Recipe video above. A great quick ramen noodle recipe that requires very little prep. The trick here is to caramelize the beef well – makes all the difference! Tip: Do not cook the ramen noodles more than it says on the packet! So basically, this has to be a super quick recipe 🙂 Now available: chicken and vegetable version!

1. Instant or Ramen Noodles – Any brand or type is fine here, although avoid the extra large ramen packets as you’ll struggle to fit two in the pan (although can break them). If it comes with soup seasoning packets, toss them.

Sub with fresh or dried noodles (rice or wheat). Prepare per packet, use ~ 2 packet cups, toss through the caramelized beef with a spray of water.

3. Mince – Ground beef is called mince here in Australia. Can be sub with any other ground meat of choice – chicken, turkey, pork, lamb, kangaroo (really!), veal.

4. Dark soy sauce has a darker color and more intense flavor than all purpose and light soy sauce. If you can’t find it, any soy sauce is fine here but the sauce color will be lighter.

6. Mirin – a sweet Japanese cooking sake, very common ingredient in Japanese cooking. Find it in large supermarkets or Asian grocery stores.

Sub with Chinese cooking wine, dry sherry. Non alcoholic sub: Use 1/2 cup water + 3/4 cup low sodium chicken stock/broth (instead of 1 1/4 cups water) and skip the mirin.

Minced Pork Noodles Ingredients: Ground Pork – The flavor of the ground pork goes so well with this sauce, but feel free to use any mince you prefer – minced or ground turkey, beef, chicken or even a vegan mince, you could even make a Merge. Chicken broth – you could use water instead but the chicken broth or chicken stock adds more flavor to the meat sauce Soy sauce – I usually use light soy sauce or regular, but for a richer tasting meat sauce feel free to use dark soy sauce hoisin sauce – or sweet bean sauce brown chili bean sauce (or 2 teaspoons each white miso paste and sriracha or any chili paste as a substitute) – available at Asian grocers or Asian section of grocery store (pictured is the latter as I have run out of the Chili Bean Sauce) Sesame Oil – This is an optional ingredient – I only use a drop to toss the noodles with after they are drained so they don’t stick together Shaoxing Wine – is Chinese cooking wine and can easily be found at Asian Grocers or Asian section of the grocery store or you can use dry sherry in its place (I use it and Chinese black vinegar in most of my sauces and total I think it’s worth having them both in your pantry if you like to cook Asian food) Garlic – Garlic Minced Ginger – Chopped or grated spring onions/scallions – Sliced udon noodles – I love thick udon noodles for this recipe but feel free to use whatever You can either make the meat sauce and serve it over rice and Asian greens/veggies – I like to use pak choi but feel free to use spinach or your favorite greens Extra add ins – some other recipes add a splash of fish sauce, Chinese black Vinegar, sweet chili sauce or Chinese 5-spice powder, or brown sugar for extra caramelization – feel free to experiment as always, feel free to use my ingredients as a guide. You can easily substitute rice noodles, egg noodles – chicken or beef mince for pork mince and any of your favorite ways.
