Noodle Recipe Kitchenaid Mixer – Life has been ridiculously busy here for a few months and it’s probably been a while since I’ve been up to my elbows making some homemade pasta using my KitchenAid mixer and KitchenAid Pasta Roller & Cutter Attachment Set. Today I pulled my Darling out, turned on some music and spent some ME time in the kitchen. Making homemade pasta is not difficult, it is actually super simple if you follow this easy recipe.
The pasta recipe I show here is slightly adapted from the recipe included in the Pasta Roller Book & Cutter Attachment set. I found that I needed more water than called for, I reflected in the recipe below.
Noodle Recipe Kitchenaid Mixer
Attach the flat beater to the stand mixer and put the flour, salt, egg and water (1 start with 1 tablespoon and add more as needed) into the mixer bowl. Turn the mixer to speed 2 and mix until they are well combined.

Remove the flat beater and install the dough hook, knead until the dough indents when you touch it. Cover the dough with plastic wrap or a damp tea towel and let it rest for up to 20 minutes.
Dust the cutting board with flour and knead the dough for a few minutes. Cut the dough into 4 pieces and shape each into a flat rectangle shape with your hands. Take one piece and cover the others with the towel while you work with the first to keep them moist.
Attach the pasta roller to your stand mixer, set the roller to #1 and turn your mixer to speed #2 and run the pasta through the roller.
If you have rolled through, fold the strip in half and feed through again. Pat the dough in the flour, change the roller attachment setting to #2 and repeat. Do this process on settings #3 and #4.

After finishing, fill the pasta on top and cover with a tea towel while repeating the process for the remaining 3 pieces of dough.
Once you have rolled out all the pasta, cover it again and remove the attachment roller and install the fettuccine attachment.
Set the mixer speed to #2 and begin feeding the pasta to the attachment. When passing, wrap your hands to create a “nest” if using immediately or hang the clothes on a hanger to dry.

Also known as zoodles (zucchini noodles), or squadles (squash noodles) – just a few names – veggie noodles are made by spiralizing veggies into long, ribbon-like ribbons, sheets or strands. Light and versatile, spiralized vegetables are often used in soups, salads, or topped with various sauces.

Reviewing The Kitchenaid Pasta Attachment
Fresh veggie noodles, a flavorful choice for mouthwatering entrees, salads, starters and even desserts. The key to a successful veggie noodle recipe is producing beautiful pita with the freshest vegetables. Very little, if any, cooking time is required to achieve a “true” al dente noodle texture.
Using the stand mixer ® attachment and stand mixer ® is a great way to chop a variety of vegetables quickly and easily. The ® 7 Blade Spiralizer Plus attachment comes with 7 different blades to peel, core, slice and spiralize fruits and vegetables. This recipe for Roasted Sweet Potato Noodles with Kale Pesto uses a fine blade to create earthy noodles topped with a delicious pesto featuring kale, almonds and parmesan cheese.
One medium zucchini will yield about 1 ½ cups of zucchini noodles. A large sweet potato will yield about 2 cups of veggie noodles.
Many vegetable noodles cook quickly, especially vegetables that contain a lot of water, such as zucchini or squash. Whether you’re boiling or frying vegetable noodles, 1-3 minutes is often all you need. Sweet potato noodles will require a little more cooking time, 5-10 minutes in a sauté pan or 10 minutes in a 400ºF oven.
Homemade Lasagna Noodles (quick And Easy!)
Wash vegetables or fruits and remove all stems. Cut the end of the product squarely, trimming away any eyes or bruises. Food should be 1 ½ inches to 3 ¾ inches in diameter and 5 ½ inches, or less, in length.
Choose your blade. Choose extra variety for radishes, variety for beets and zucchini, or medium for butternut squash, sweet potatoes and zucchini. Start by turning the mixer on stirring, then gradually increase the speed to 4-6.
Whether or not you peel your produce is a matter of preference. If you’re spiralizing a vegetable with a tougher exterior, like butternut squash or kohlrabi, you’ll want to peel it – just install the peeler before you turn the mixer on.
Whether you use veggie noodles instead of traditional pasta in a carbonara or pesto dish, or, as the star of a fresh summer salad, you want to let the noodles “hang out” for a few minutes after eating. spiralized to release some of their moisture. Spread the noodles out on a clean towel and sprinkle with a little salt. After a few minutes, gently pat dry.
