This cold sesame noodle salad dressing is quick and uses several kitchen staples. You will need soy sauce, sesame oil, minced ginger, garlic, sesame seeds and rice vinegar. I usually find rice vinegar in the Asian food aisle of my grocery store or at my local Asian market. But if you can’t find it, distilled vinegar works in a pinch.

There are few foods better suited to a hot summer day than a bowl of cold Chinese noodles. This suān là (酸辣) or sour-spicy cold noodle recipe is refreshing and deeply satisfying at the same time.

Yes, spaghetti. We recently ate at a Taiwanese restaurant in another New Jersey strip mall (home to a gem of the Garden State’s culinary scene).

It was a hot day in the mid 90’s (about 35°C) and we hadn’t eaten at home yet so we ate lunch outside in the heat.

Scanning the menu, looking for relief, I spotted the second 酸辣冷面 (suān là lěng miàn), which I ordered.

The restaurant actually made a version with spaghetti, which didn’t offend me because cold spaghetti noodles with soy sauce and sesame oil is basically the first thing I learned to cook as a kid (from my mom).

Moral of the story: you can use Chinese wheat noodles here, but if you have spaghetti, use it. You don’t have to feel like you’re missing out either!

Note that if you like your noodles al dente, you’ll want to cook them to the upper end of the range indicated on the box, or even 1 minute past al dente.

Sesame Noodle Salad

If your noodles are too al dente or even undercooked, they will absorb the liquid in the sauce and the noodles will become dry.

The sauce on these noodles is different from our sesame noodles. It’s easy and not overwhelming. Soy sauce adds salt and rice vinegar adds tang. Chili oil and sesame oil also add nuttiness and richness (as well as spice in the chili oil part).

This makes the dish much smaller than sesame noodles. The addition of kale and cucumber also adds freshness and crunch.

We say a little MSG really lifts the sauce, but here as an additional ingredient. Another great alternative, if you can find it online, is mushroom powder, which is delicious to eat.

No Chop Cold Veggie Noodle Bowls With Soy Lime Vinaigrette

Cook noodles according to package directions until al dente or 1 minute. Take the noodles out of the pot and put them in a colander. Rinse the noodles under cold water, reserving some of the cooking liquid.

Meanwhile, in a serving bowl, add light soy sauce, Shanghai rice vinegar, chili oil, sugar, Sichuan pepper powder, sesame oil, dark soy sauce, salt, MSG (if using), and garlic.

Mix everything together and serve. If the noodles seem dry, add a little more of the cooking water.
