Because they are so common, they are easy to find walking the streets of Chinatown. This Shanghai noodle dish is one of the most popular noodle dishes in China, and it’s also easy to make at home.

Traditionally, the Chinese make Shanghai noodles with pork or beef, but you can also make them with seafood, chicken, or any tender meat of your choice, by cutting them into thin slices of similar size. If you eat too much meat and crave seafood, you can cook these Shanghai noodles with shrimp, cuttlefish, squid, or a combination. Shanghai noodles are easy to cook with a variety of topping options. The most important part is preparing the stir-fry sauce that makes these noodles delicate. You’ll find the easiest way to make this special sauce in this recipe.
Soak dried shiitake mushrooms in warm water for 30 minutes, squeeze out excess water, and cut into thin slices. (If you don’t have dried shiitake, you can substitute fresh shiitake or any white mushroom.)
Thinly slice the cabbage and bell pepper. Roughly chop the garlic cloves. Cut shallots into 1″ pieces.
Put all ingredients of noodle sauce: soy sauce (dark and light), Shaoxing wine, oyster sauce, sesame oil into a mixing bowl, set aside.

To soften and loosen noodles, blanch in boiling water for 1-2 minutes. Drain it and set aside. (Cook noodles according to package directions. I used fresh Shanghai noodles in this recipe.
Heat a skillet to medium-high heat, drizzle with 2 tablespoons of oil, add the chopped garlic and stir for a few seconds.
Then add the prawns and season with salt and freshly ground black pepper. Flip and cook until the shrimp are almost done.
Add sliced shiitake mushrooms, then sliced cabbage, then sliced bell pepper, and continue to stir-fry for 1 minute.
Singapore Style Chilli Prawn Noodles
Then add the noodles, pour in the sauce, and continue to stir-fry over medium-high heat for 2-3 minutes, until the noodles are shiny and the sauce is absorbed.
Add the chopped scallions and mix well to incorporate all the ingredients. Transfer to a plate.

Here are step-by-step instructions for making the recipe. We start by combining the stir-fry sauce ingredients shown in the picture below.
