The best part about making these at home is that you can use the best ingredients, there are no artificial colors added to the dish and you can customize the noodles to your taste.

Add more or less vegetables, adjust the sauces to your taste or load the Hakka noodles with more vegetables if you want to make them healthier, it’s all up to you.

Vegetables – I like to add onions, green chilies, scallions (green onions), carrots, green peppers (chili), and cabbage to my recipe.

Feel free to add any vegetables you like and leave out the ones you don’t. Mushrooms, broccoli, purple cabbage, zucchini and bok choy are some other options.

Cook for 2-3 minutes, stirring a few times in between until the noodles are just cooked (al dente). Do not overcook otherwise the noodles will become soft.

When the oil is hot and shimmering, add 1 tablespoon minced garlic and 1 tablespoon minced ginger and sauté for 4-5 seconds.

Add 1 cup finely shredded cabbage, 1 cup finely julienned carrots, and 1 cup thinly sliced ​​green peppers (chili peppers) and sauté for 1 minute.

Now add 2 teaspoon of dark soy sauce, 1 teaspoon of white vinegar, 1 teaspoon of hot sauce, ½ teaspoon of salt and ¼ teaspoon of black pepper powder and mix well.

Noodles – Keep an eye while boiling the Noodles. Do not overcook them, otherwise they will become soft and not taste good.

Chop the vegetables into thin julienne strips. I used a julienne peeler for carrots and a sharp knife for capsicum and cabbage.

To make it with eggs, beat eggs and add them to the wok, and mix. Take them out and mix them again with the prepared noodles.
