This mock crab salad is perfect during the summer. Really, any RUNNING crab is perfect in the summer! It’s made with imitation crab meat which makes this recipe super AFFORDABLE because we all know crab is super expensive!!
Ratatouille Tart Recipe
This salad is a healthier version than most crab salad recipes because it’s made without mayo! Instead, I use creamy Greek yogurt and a little sour cream!
Fake crab or “krab” is something my mom used to buy ALL the time as a kid and I loved it! She would quickly reheat it as is and serve it with a lemon butter sauce. It was delicious and tasted just like real crab!
It wasn’t until recently that I did my research on what a mock crab actually is. I was a little afraid to find out…
Luckily, mock crab is actually seafood…not just the CAB. It’s just a white fish called “surimi”.
Buffalo Cauliflower Bites
A binder (starch) is used to make the fish into those neat crab sticks. Then, some coloring and sodium are added to increase the flavor and make it more “crab-like”.
“So, Aleka, does it taste like crab?” Heck yes! And best of all, it’s much more affordable! So if you’re expecting company and don’t want to cough up $20-30 bucks to buy real lump crab meat, then fake crab meat is a much more affordable solution.
What I love about mock crab is how well it holds its shape. If you’ve ever bought jumbo crab meat, you know how delicate it is. The lumps will break easily if you are not ready with it.
The binder they use keeps that fish tight so you can throw it, mix it, squeeze it, heck, throw it against the wall for all I care. My point is, it will keep its shape which is what you want in the fake crab meat salad.
Low Carb 7 Layer Salad
Most crab/seafood salads are made with mayonnaise. I’ll discuss how I really feel about mayonnaise in this Easy Cold Spinach Dip post. (By the way, this recipe is the most popular because there is no mayo!)
Instead, I used Greek yogurt and sour cream. The mixture is so delicious especially when mixed with the fresh herbs and lemon juice. The taste is refreshingly bright and tangy. Ideal for those hot summer days.
You could always use mayo if you like but personally, I like it better when it’s NOT just mayo.

This recipe is made with seasoned taco ground beef, plenty of cheese, and a little sour cream or plain Greek yogurt, guacamole or avocado, shredded lettuce, and sliced green onions. Add sliced pickled jalapenos if you want extra spice! I used my own taco seasoning mix, but you can use store bought taco seasoning mix if you prefer.

Taco Meatballs And Cheese Appetizers
Trim the ends of the bell peppers and then cut lengthwise. Remove seeds and ribs. Place peppers on a baking sheet lined with parchment paper. Arrange the peppers in a single layer, cut side up. Bake for 5 minutes.
Top peppers with ground beef and cheese. Bake for 7 to 8 minutes or until cheese is melted. Top with sour cream or Greek yogurt, guacamole or avocado, lettuce, green onions and sliced jalapenos.
1 Lean, 3 Green, 3 Condiments, 1/2 Healthy Fat (for 95 to 97% lean ground beef) and 1 Optional Snack
** If you want to omit the lettuce and sliced green onions, use 224 g of mini bell peppers.
Garlic Butter Shrimp (w/ Lemon)
In a large skillet over medium heat, add meat and seasonings. Cook and break up meat until well cooked about 6 to 7 min. Drain meat of any excess fat. I love serving these Greek Salad Bites as a light side dish. Think of them as a small example of a Greek salad without the lettuce. Just like my Spicy Cucumber Stacks, they are served on top of a slice of cucumber instead.
This appetizer is fresh and light and lower in carbs and fat. It is perfect for an occasion when you are looking for refreshments that are not too filling. People at a party always appreciate being able to whip up treats like this one. There are usually so many fattening things to eat at a party, so this is a good choice!
The “salad” part of the recipe is a mixture of feta cheese, sour cream, fresh parsley, sun-dried tomatoes and black pepper. Once you mix that together, you can keep it refrigerated until you’re ready to assemble the kits. Make up to one day ahead.
When you are ready to serve, cut hot house cucumbers on the diagonal. Top each slice with a spoonful of the goat cheese mixture.
Ricotta Bacon Stuffed Mini Peppers
Combine fresh basil with chopped kalamata olives. spoon a little of that on top of each dollop of cheese. Then these are ready to serve.
