Ingredients:
- 4 duck eggs or chicken eggs
- 75 grams of coconut pulp
- 1 stalk of green onion
- 2 sticks of celery
- 2 pieces of lime leaves
- 1 sheet of turmeric leaf
- 3 shallots
- 2 cloves of garlic
- 1/4 chopped onion
- 25 grams of curly red chili, can be changed according to taste
- 1/2 pieces of turmeric segment, approximately 2cm
- 1/4 tsp pepper powder
- 1 tsp salt, can be changed according to taste
- 1/4 tsp flavoring, you can use beef or chicken flavour
Steps:
- Roast coconut dregs over low heat until dry, set aside in a container
- Toast the chopped onions, green onions, celery, and turmeric leaves and set aside
- Blend the shallots, garlic, turmeric, and lime leaves. You can use a mortar or a blender
- Beat the eggs, add the spices that have been mashed, coconut, the ingredients that have been roasted, salt, pepper, and flavoring
- Mix all the ingredients thoroughly
- Cook over low heat with a pan then cover
- Flip the omelet, and cook again until cooked
- After it is browned, drain and the padang omelette is ready to be served.
