It’s as if the authors assume everyone knows the recipe and just need a quick guide so they don’t miss an ingredient.

These spinach squares are exactly the kind of recipes you’ll find in those books. Only the ingredients are simple enough to never go out of style. This recipe shouldn’t either. I’m a little sad I didn’t really test it before this year!

Can I just say these are fantastic recipes for an inexpensive appetizer? The main ingredients are easy to find, cheap and flexible!

Spinach. If you’re using fresh, you’ll need to cook it, cool it, and chop it up so you don’t end up with bunches of spinach.

Busy chef, no time for that! Buy chopped frozen spinach, thaw it. Squeeze out the excess liquid and go! These squares will take less than 10 minutes from start to oven using this shortcut.

Also, onions are optional. But you won’t really taste it, and it gives a very nice taste. I prefer to use red or sweet onions, but use what you have.

And if you really want to intensify the salty flavors, feel free to add some garlic. Or spice up the squares with a little red pepper.

Consider the type of cheese in the recipe as a suggestion. Honestly, whatever cheese you like with spinach is GREAT!

I also used this recipe to use up those various bags of shredded cheese in the fridge that only had about 1/3 cup left in each. No one seems to want to finish them off, so this is a good way to do it.

Side note, is it just my family? I love them and they’re great because they don’t leave bits in containers in the fridge. But when it comes to shredded cheese, no one touches the bag when it’s less than the last half cup. It’s so weird to me.

In any case, I would recommend that half of the cheese be of the hard-melting variety. I’ve found that if you do this, the squares will reheat to “fresh from the oven” quality. If you only use a less “melting” cheese like cheddar, it will lose a bit in heating.

Dear… this is perfect to make ahead! Seriously, you can make these up to 3 days before serving and refrigerate or freeze for up to a month!

The recipe makes about 2 dozen, depending on how you cut them. So you can always make a whole batch and split a part depending on what you need.

For example, while we prepare larger holiday meals for Thanksgiving and Christmas, New Year’s Eve is always appetizer-heavy. So, while I might make a batch of these squares to serve as an appetizer for a Christmas meal, I’ll be freezing some to reheat for New Year’s Eve.

If you are serving them as part of an appetizer, cut them on the smaller side. These spinach cheese squares are FILLING!

They smelled wonderful, so Kum and I each ate two larger squares after filming. That was just before lunch. We haven’t finished lunch.

Side dishes are also very good warmed and topped with a runny egg for breakfast. It’s like a lazy cook’s eggs florentine and it’s so good!

Almond flour doesn’t have the same binding properties as all-purpose flour, but I bet you could easily use your favorite gluten-free all-purpose flour (like a 1:1 baking mix) with great results! Most bite-sized quiches are crustless for this very reason. Which is fine and dandy (and certainly convenient), but it’s actually a frittata. Quiche = flaky crust, frittata = no crust. Please call them what they are.

For these mini quiches (NOT frittatas), I used phyllo dough, layered with melted butter and formed in mini muffin cups, to create the ultimate flaky crust with crispy paper-thin layers and the perfect crunch. No, phyllo isn’t as easy to make as, say, puff pastry, but it sure beats dealing with the tedium of making homemade pie crust into tiny shells (which I’ve done before and while it’s undeniably good, it borders on insane).

These mini quiches are based on a recipe from our Breakfast for Dinner cookbook (because you really can eat them any time of day!) In the book, we added some sautéed garlic zucchini to the pesto egg mixture, but here we decided to go with plain pesto (mostly due to the time limit with everything else we were preparing).

To serve as a nice compliment to the vegetable-based pesto quiches, we’ve also made a spicy chorizo ​​version to satisfy meat eaters (and honestly, after that chorizo ​​quesa I made a few weeks ago, I’m tempted to put chorizo ​​in everything!)

For the pesto, I used a batch of my favorite homemade pesto that I froze in September before the cold killed my basil plant. For that now I thank myself in the past. While I prefer homemade pesto, you can certainly use your favorite brand purchased here.

The phyllo shells can be prepared a day in advance. I made a total of 48 quiches in 2 muffin tins and simply put them in the (chilled) oven overnight (because cats). The morning of our brunch party, we simply whipped up the egg mixture, poured it into the crusts, and baked the quiche fresh just before serving.

I’ll also add that baked quiches freeze pretty well if you really wanted to make them ahead of time, although you want to handle them gently (so maybe store them in a plastic container instead of mixed in a ziplock bag) so you don’t crumble the phyllo crust.
