Rice Cake Recipes – I love rice cakes and all kinds of rice cakes out there. I feel like I’ve tried so many options but I’m still thinking!
When I started eating healthy and losing weight (read my weight loss story here), bread was the first thing I cut back on. It’s still a big weakness for me, and I like it so much, I haven’t really cut it out of my diet.

However, I realized that a piece of bread is often used as a baking dish, so I started substituting rice cakes for bread slices whenever I could. It didn’t take long for me to find a bunch of rice cakes for healthy snacks and cheap meals.
Avocado Rice Cake Recipes
The rice cakes have such a satisfying bite that they throw the calories out the window (and leave the heavy bread behind). Rice cakes cut out the carbs of bread and fries for a great eating experience similar to chips or steak – crunch, crunch, crunch!
Although rice cakes come in many different flavors, I prefer to add my own toppings to brown rice cakes, which are more hearty.
My favorite five healthy rice cakes for snacks and meals – and a list of other ideas below. The options are endless – just try to avoid anything warm as the rice can easily become soft.
I really like Lundberg Rice Cakes because they are firmer than Quaker and other store brands. I love supporting a great company from Northern California! You can find it on Amazon in a variety of flavors. I also buy it at Trader Joe’s.
Ranch And Vegetable Topped Rice Cakes
You can make the toppings ahead of time, but DO NOT put the toppings on the rice cake until right before serving unless you want the business to continue.
Some rice cakes are firmer than others (more on that below), but in general, they are light and airy, so the moisture from the toppings starts to spoil the structure (and that loud noise ) of the cake.
The two longest standing brands of rice cakes that I know of are Quaker and Lundberg Farms. I know many markets have their own brands – admittedly I haven’t tried them all.
Our favorite is Lundberg Farms. Lundberg is a rice farmer in northern California, and they produce a lot of produce, a local brand for me even if it’s a national brand (and a rice farmer for other states).

Making puff pastry rice cakes is quick and easy. You can make several of the same image or a different pair.
STEP 1: Spread nut butter, hummus, mashed avocado or cheese on top of rice cakes. I recommend mashing the avocado with a fork in a small bowl before spreading it over the cake. The rice cake will break easily as the cake is brittle.
STEP 2: Add the first topping: eggs on almond butter, banana on peanut butter, cucumber and tomato on cottage cheese, sliced peppers on hummus and egg poached or smoked salmon on mashed avocado.
