Note 1: Unlike regular cucumber, English cucumber has thin skin and sweet taste. If you have to use regular cucumbers, I recommend peeling them.
Note 2: Cold-caught salmon is best for appetizers as it has velvety softness and delicate fat, which pairs perfectly with crisp cucumbers.
