500 grams of beef shank

500 grams of beef ribs

250 grams of Red Beans

Ground spices:

20 red onions

15 cloves of Garlic

8 grains of Candlenut

1 thumb Ginger

1 large stick of Turmeric

8 large red chilies (remove the seeds if you don’t want it spicy)

1 tbsp coriander

1 tsp Cumin

1 grain Nutmeg

Other Ingredients:

5 bay leaves

4 pieces of orange leaves

3 stalks of Lemongrass, crushed

2 Cinnamon sticks

5 cloves

Salt, seasoning, sugar and pepper according to taste

2 coconuts to take the coconut milk (divide into thick and thin coconut milk), can also be replaced with 400 ml of instant coconut milk which is diluted with water

Enough water to boil the meat

How to cook:

1. Boil the ribs and beef briefly to clean off the blood and dirt. Discard the water and replace it with new water.

2. Sauté the ground spices and other ingredients until fragrant, mix them into a pot of meat

3. Reboil the ribs, meat and red beans using the method of 10 minutes boil, let stand 30 minutes, boil again 10 minutes, and let stand again for 30 minutes. Timing starts from the point where the water boils and the pot must be tightly closed. This method can save gas and speed up the cooking process. Apart from this method, it can also be replaced by using a pressure cooker.

4. After the meat is tender, cut the meat according to taste and put it back into the pot. Add thin coconut milk, keep stirring until the coconut milk is hot. Add thick coconut milk, stir again until the coconut milk is cooked but not broken.
