Are you in the holiday spirit yet? A not-so-secret confession: I’ve been in the holiday spirit almost since October. Like, literally before Halloween was even here. Everyone made fun of me for it (and by everyone I mean especially CODY🙄), but I just couldn’t help myself! This is where I made all the Gluten Free Pumpkin Chocolate Chip Cookies, Slow Cooker Mexican Hot Chocolate, Creamy Garlic Red Potato Mash, and Easy Gingerbread French Toast. I mean can you blame me??

Stuffed Purple Sweet Potatoes With Turmeric Tahini
I’ll admit that I may have gotten into all this vacation stuff a little early. And now….well….I’m paying the consequences with a bit of holiday burnout. I mean, not entirely, I don’t think my Christmas obsession will ever really go away. But in the midst of all the holiday recipes and craziness, these vegan chickpea and sweet potato bowls just feel…right. 🙂 You know?
Is a prescription even necessary? Probably not! I literally made them with veggies and grains I had in the fridge + chickpeas for protein. So delicious!
There are so many ways to make these bowls. They are also very similar to these Vegan Turmeric Quinoa Power Bowls! So if you liked that recipe, you’ll really like this one too. I also recommend topping these power/nourish bowls with tahini! It gives it a creaminess that simply brings all the flavors together. I definitely recommend having tahini on hand for the bowls!
A few other notes about this recipe: Use canned chickpeas and pre-sliced sweet potatoes if possible! In the video below, I cut the sweet potatoes myself, but buying them already cut in the store saves a lot of time and energy 😉
