Traditional Snack Recipe: Warm and Delicious Pukis Cake

  1. First, prepare a pukis cake pan which is usually made of metal with several small round cavities. Grease the cavities with butter or oil so the cakes don’t stick when baked.
  2. In a bowl, mix flour, rice flour, instant yeast, baking powder, granulated sugar, vanilla powder, and salt. Stir well until all ingredients are evenly mixed.
  3. Next, crack the eggs into a separate bowl. Beat the eggs until loose and add thick coconut milk. Stir well until completely mixed.
  4. Pour the egg and coconut milk mixture into the bowl with the flour mixture. Stir with a whisk or spatula until all the ingredients are combined into a smooth, lump-free dough.
  5. Let the dough sit for approximately 30-60 minutes to give the yeast time to react and develop a soft texture.
  6. After the dough has rested, heat the pukis cake tin over the stove over low heat until the pan is hot. Make sure each cavity of the pan is exposed to heat evenly.
  7. After the pan is hot enough, pour the pukis dough into each cavity until it is full, but not too full so that the dough can expand when baked.
  8. Cover the pukis cake tin with a lid or a large skillet. Bake over low heat until the bottom of the cake is browned. Then, flip the cake using chopsticks or a toothpick and bake the other side until perfectly cooked.
  9. Remove the pukis from the tin and place them on a cooling rack. Let the cake cool slightly before serving.
