No, you don’t. Many people are put off by the belief that they need a special kit, and that’s simply not the case. Of course, it’s much easier to mix butter and sugar with a mixer, but I didn’t get one of those until I was 40!

When looking for easy cake recipes for beginners, I always recommend starting with an easy bread recipe. Shortbreads don’t require such a light touch like a sponge cake. The cakes are forgiving and won’t collapse in the oven if overworked, just like a sponge cake.

A good place to start would be our Easy Banana Bread or our Easy Chocolate Cake (see images below). Both are simple cake recipes, ideal for the beginner baker.

Apple Sponge Cake

The creaming method is the process of creaming butter and sugar together. Many cakes will start this way and it’s a simple but important technique to learn. Don’t rush and skip this step!

Butter is able to hold air, and when the butter is creamed together with the sugar it forms small air pockets in the butter. When the cookies are baked, these air pockets expand, resulting in a lighter cookie with a nice open texture.

TOP Tip! I recommend starting with soft and room temperature butter as this makes it a lot easier. So take the butter out of the fridge at least 2 hours before you plan to bake. I use a hand mixer for ease, but with a little extra elbow grease, a wooden spoon does the same job.

The most common raising agent used in baking is baking powder. Baking powder is a combination of baking soda (alkali – also known as baking soda) and cream or tartar (acid). Some recipes also call for baking soda and cream of tartar to be used alone or along with the baking powder.

TOP Tip! Use only the amount of growth agent specified in the post and measure accurately. While it’s great for cakes and baking, too much baking powder makes cookie dough taste bitter and grainy. It can also cause the cake to rise too quickly in the oven and then collapse on itself.

I like to put my flour through a fine sieve and sift it into the cake. The sieve breaks up any lumps of flour or baking powder and means you don’t have to beat them into the cake batter and risk destroying all the air you created when you creamed the sugar and butter together.

The most reliable way to test if a cake is done is to insert a cocktail stick or skewer into the center of the cake once baked. If the skewer comes out clean, with no raw dough attached, the cake is ready to come out of the oven. If any cake batter is attached, place the cake back in the oven, bake for another 5 minutes and check again.

After baking, let cool before slicing. Again, walnuts have been added to this bake, however, they can easily be left out if preferred. It’s worth noting that this recipe is very easily adapted to make gluten-free chocolate brownies, and instructions on how to do this can be found in the recipe post.

Tweed Squares are a delicious tray. Soft and light vanilla sponge with flecks of dark chocolate running through it, topped with frosting and a little more chocolate at the end. This is a delicious recipe from Michelle’s childhood that she loved and still bakes regularly today.

Our classic Sticky Gingerbread Bundt is just a sticky gingerbread that has been baked into a beautiful shape.
