Vegan Cake Recipes Easy
Oil with a neutral aroma, such as sunflower, avocado or olive oil. Olive oil adds a light flavor, like in my lemon olive oil cake.

Blueberries, fresh or frozen. If you are using frozen blueberries, you don’t need to thaw them, but you may need to bake the cake for 5 minutes longer.

Simply add all the dry ingredients to a bowl and mix until combined. Add all the wet ingredients except the blueberries and mix until combined (there should still be pockets of flour).
At this stage, we do not mix the cake batter completely, because later it needs to be mixed even more. We don’t want to overmix the cake batter!

Then add the blueberries and mix them through the batter! I made this thick batter that prevents all the blueberries from sinking to the bottom when we bake the cake.
The lemon cake batter is a grab-and-go consistency, but not so thick that you have to flatten the top! After pouring the batter into the cake pan, sprinkle the remaining blueberries on top and press them into the cake a little.
I only pressed some berries into the cake for appearance and stability, but this is optional.
The cake is ready when the surface is golden brown and you can insert a skewer in the middle and there is no wet dough on it.
Easy Vegan Carrot Cake
This vegan blueberry lemon cake will work with coconut sugar, but it completely changes the flavor profile. Imagine eating caramel cake with a hint of lemon!
I would recommend just using a larger cake pan or bundt pan for this recipe. It is already a very thick cake so a smaller and taller cake pan may not bake in the middle.
This cake will be baked in a pan. However, I recommend baking it for 60-70 minutes, just like my lemon and olive oil cake (which is the same recipe as this one, but without the blueberries).
If you want muffins instead of cake, I recommend baking my vegan lemon poppy seed muffins and adding blueberries. If you want, you can leave out the poppy seeds!
Easy Vegan Apple Cake :: Exceedingly Vegan
I suggest using only half the amount of blueberries (and using them for the inside of the cake) and omitting the blueberries on top.

Then last week I asked my baker friend Samantha (who, btw, is generous) if she had a good vegan vanilla recipe. Within seconds, she sent me a picture of the handwritten recipe. I wasn’t completely convinced at the time – it seemed too easy to be good!. In fact, even after the cake turned out so well, I told Samantha that I would try it one more time before sharing on the blog.
On a side note, I find that most egg-free and vegan recipes bake better as brownies or thin layers.

Add this to a bowl and whisk until rich and thick – set aside for the cake frosting (once completely cool).
Place the sugar and vegan margarine in the bowl of your food processor and cream until light and fluffy.
Add all the remaining wet and dry ingredients to the bowl and mix until well combined, but be careful not to over mix or you will end up with a thick cake.

Transfer the cake batter to the prepared (greased and lined) cake pan about 8 inches in diameter and bake in the preheated oven for 50-55 minutes until a skewer inserted into the center comes out clean and a nice sponge springy to the touch.
When the toothpick comes out clean, the cake is ready – take the cake out of the oven and leave it in the mold for 10 minutes to cool.
When the cake has cooled, take it out of the mold, let it cool completely, and then spoon it onto the glaze (be patient and let it cool).
Be sure to cover the cake and chill it in the refrigerator for a few hours before serving.
