I was inspired by our vegan lentil curry to make this and it will definitely be on rotation from now on in our house.
Chickpea Curry (best Seasoning Blend!)
It’s a perfect combination of spices and flavors in a very tasty sauce. But the best part is that it is ready in less than 30 minutes and very flop proof!
It’s the perfect meal to make on a weeknight when you don’t have a lot of time but still want to eat a really good meal.

Minute Vegan Chickpea Curry
Serve with basmati rice (or cauliflower rice if you prefer), and fresh cilantro and you have a delicious meal. Some vegan naan on the side would be great too!
Canned chickpeas. We used two 15-ounce cans of chickpeas which makes this recipe quick and easy to make. If you prefer to use cooked chickpeas (not canned) you can use only 3 cups.
Coconut Milk. We used canned, full fat, virgin coconut milk and this gives the flavor without overpowering the other flavors at all.
It also freezes well for up to 3 months. Thaw overnight in the refrigerator and reheat in the microwave.

Step 1: Heat the oil in a pan over medium heat and add the onions, garlic and mushrooms and cook for 6-7 minutes until soft and starting to brown.
Step 3: Add the chickpeas and cook for another 5-10 minutes until heated through, slightly cooled and browned. Add salt and pepper, if needed and serve!
Quick Tip: Spice up your pickled peas by sprinkling chopped herbs like parsley and a squeeze of lime juice for extra flavor.

Spicy Vegan Chickpea And Cauliflower Curry
I have something for a very simple dinner. These sesame sticky peas, sesame noodles, chana masala and these Mexican sweet potatoes are my current favorites.
But I don’t like these vegan sesame chickpeas because they take 15 minutes to make and are so flavorful, your taste buds will explode.
Moreover, this sesame medicine can be used in many things. From peas, to tofu, tempeh, salmon, chicken, noodles, cauliflower, or any kind of buddha bowl! It’s a versatile recipe with lots of flavor.

Vegan Chickpea Salad (10 Minute Recipe!)
Wash and rinse the chickpeas until there are no bubbles left. Set them aside while you prepare the other ingredients.
Mince the garlic (I like to use this garlic press so it’s very finely chopped) and add to a saute pan with 1 tbsp of avocado oil. Saute until the garlic is lightly golden brown and very fragrant.
Whisk together the arrowroot powder and 2 tbsp vegetable broth in a bowl and set aside. We’ll be using this in a second to help soften the sesame sauce. You can also use chicken stock or water instead.
To the pan with the garlic, add the sesame oil tamari (or soy sauce if not GF), maple syrup, ginger, rice vinegar and remaining vegetable broth. Wash together.
Easy Vegan Chickpea Curry
Stir the arrowroot mixture again to make sure there are no clumps formed at the bottom and add them to the saute pan with the remaining sauce. Wash together.
Once it is sizzling around the edges, give it a quick stir and add in the chickpeas and carefully fold the sauce over the chickpeas until they are well coated.
The sauce will start to thicken, keep stirring so that the sauce covers the peas. Let the chickpeas cook until the sauce is nice and thick. The chickpeas will also darken as they absorb the moisture, this is good as it brings out a lot of flavor!
After 5 minutes or once the sauce has thickened, turn off the heat and let all the ingredients mix together for another 5 minutes.
Vegan Chickpea Stew
My favorite way to have this vegan chickpea recipe is with my instant pot rice, roasted broccoli, and scallions or chives to top it all off!
It’s also delicious with quinoa, bok choy, roasted spinach and a sprinkling of sesame seeds on top. You really can’t go wrong. This sesame sauce can also be used for chicken, salmon, tofu, cauliflower, or any protein.
Make it vegetarian with tons of veggies, rice, quinoa, cauliflower rice, or whatever you have on hand.
What kind of sesame oil should I use? Make sure you use good quality roasted sesame oil. Not all sesame oils are created equal and you want to make sure you have the best!
Chickpea, Coconut, And Cashew Curry Recipe
Do they save? Once prepared, this vegan chickpea recipe will keep in the refrigerator for about 3-5 days. To reheat, add it to the pan with a splash of veggie broth or oil to make it nice and tasty.
Are chickpeas gluten free? Chickpeas, also known as garbanzo beans, are naturally gluten-free, and so is the rest of this recipe! Be sure to use tamari (gluten-free soy sauce) if you have a gluten intolerance or allergy.
What can I use instead of arrowroot? You can use cornstarch or tapioca starch instead of arrowroot powder. A neutral flour like brown rice flour should also work, but I’ve only tested this recipe with arrowroot flour and cornstarch.
