Thanks to a few of you writing to me asking for simple and basic cake recipes, I’ve created the easiest cake I’ve ever made. It took me 3 tries to get the shape right, but friends, it’s light, blind and surprisingly, fun! And talk about simple ingredients, only 6 ingredients and it’s oil free, but it doesn’t taste like oil I promise. Moist, smooth and delicious! With the glaze, only 8 ingredients in total! How’s that for an easy vegan lemon cake??

This vegan lemon cake is for those who don’t mind using regular white flour and white sugar. I totally get it if you don’t! I rarely use them either, as most of you know. 90% of the recipes I write, I use gluten-free or healthy flour and healthy sweeteners, but this is not one of those times. My Vegan Vanilla Cupcakes use white flour and white sugar and are one of my all-time favorite desserts, so there’s still enough for all of you who love very simple ingredients.

SO in other words, this is not a cake to try and try to be healthy, there are so many options already on my blog, so if you don’t mind a little white flour or white sugar with a special occasion, then make it what it is and enjoy how fun it is! Step 1: Now this step is VERY important to the outcome of the cake. First, make sure you are using a fresh, room temperature can, NOT COLD.

Coconut milk. With full-fat coconut milk, the coconut cream will separate from the water in the pit. You MUST empty all the water and cream from the can into a blender or other bowl and blend until smooth or whisk well until smooth and combined. If you don’t do this first, you run the risk of getting too much cream or too much water, and not the right combination of each ingredient, which will affect the shape of the cake. After it is mixed and smooth, then measure the right amount of milk needed for the cake.

Step 4: Pour the water over the dry ingredients and gently whisk or stir with a large spoon until moistened and mixed, being very careful not to over mix. The batter will be very thick, don’t be tempted to add more milk! Scrape the batter into the pan and smooth.

Step 5: Bake for 25 minutes until a toothpick comes out clean, and the sides are brown and come away from the dish.

Step 6: Garnish and add more lemon zest for presentation. Let the glaze thicken a bit and then cut and serve!

This vegan lemon cake is best stored at room temperature covered in foil. I keep the slices in the same container they were cooked in. It remains fresh and moist for the first 2 days (although it is better on the day it is made), but on the 3rd day, it starts to dry out.

You start by adding vegan butter and sugar to your stand mixer and kneading them together. Then add lemon juice and mix.

Then add the dry ingredients to the water and mix until very smooth. Add lemon juice.

At this point it will feel like this won’t make cookie dough, it will feel very dry. But get in there with your hands and the next thing you know you have a nice big ball of dough.

Then flatten the balls. You can flatten them with a fork, or by placing squares of parchment paper over the balls and pressing them down with a glass press.

When they come out of the oven they will be very brown on top but still very soft in the middle. Leave them to cool on the tray and they will harden as they cool.

When they are completely cool, then pour them with a delicious lemon glaze. It is a simple mixture of powdered sugar, lemon juice and lemon juice.

The tart has a melt-in-your-mouth shortcrust pastry and a smooth custard-like filling. The coconut flavor in the filling is balanced by the high amount of lemon juice and zest.
