I’ve been slowly working on this mac and cheese ever since I posted my vegan queso recipe two months ago. For the first time, I tried using the pasta cooking water instead of queso’s secret ingredient (crushed potatoes) and it turned out great.

Then, I added the potatoes back in, and the potato starch makes this cashew-based queso super silky and creamy. That sounds good!

Nutritional yeast is a staple, in addition to mashed potatoes. It gives some cheesy flavor and color. Frontier Co-Op has started offering it in smaller containers, and after using it in this recipe, I believe their product is superior. It has less funk than the regular store-bought brand, so if you haven’t enjoyed nutritional yeast in the past, please give it a try.

I kept tweaking the amount and seasonings until we had the right amount of sauce for a half pound of pasta. I finally got around to it. Don’t be intimidated by the ingredient list – these are all basic kitchen ingredients!

*Broccoli: You can omit the broccoli altogether or substitute it with finely chopped cabbage or peas (about 1.5 cups). You don’t need to use all the sauce if you leave it out.

**Raw Cashew Notes: Most recipes like this recommend soaking the cashews for 4 hours beforehand to make them easier to blend and digest. To be honest, I never wet mine because I have a powerful Vitamix to blend them. In this recipe, the cashews are cooked in hot liquid, so they are softer and easier to mix. However, if you don’t have a fancy blender or are concerned about the digestion factor, go ahead and pre-soak them.

This is really a “classic” vegetarian mac and cheese recipe, meaning that classic mac and cheese usually includes a béchamel sauce, lots of cheese, and then it’s put in a dish and topped with breadcrumbs and baked.

We made a vegan béchamel sauce and added all sorts of cheese flavors instead of real cheese so that even non-vegetarians would recognize this cheese as everything, and then we topped it with delicious breadcrumbs and baked it. Just like the classic version.
