Need a quick ramen fix? Say hello to this super easy shio ramen! This is a ‘hack’ passed down from my mom when she was in school– and it’s actually quite popular in Japan despite the crazy amount of instant ramen varieties.

When it comes to toppings, Shio ramen is usually very simple and comes with 2-3 toppings: chashu, naga negi (Japanese long scallions) and nori. I have two chashu recipes for the coming soon ramen but you can also add additional vegetables (see recipe below for some ideas) fried tofu or any protein of choice to top it off.

How to store: This creamy vegan ramen is best eaten fresh, but keeps very well. If it’s stored for more than a few hours, it’s best to drain and store the noodles and broth separately so the noodles don’t get too soggy.

Making vegan ramen is much easier than you think! I used to avoid making noodle soup of any kind. I think they need a million ingredients and don’t feel like they can match the amazing ramen I had in Japan a few years ago!

However, you can make the BEST STOCK from a few simple plant-based ingredients from your local big supermarket! These ramens are:

I know everyone has different tastes so the ramen broth can be adjusted to be thick or thin, spicy or non-spicy, salty or not!

And a bonus: Because this ramen is vegan, you don’t have to find or add any weird animal bits, compared to traditional ramen! Double yay!

You only need 7-8 ingredients to make the base of this ramen! All the ingredients are easy to find and can be purchased from major supermarkets including:

Simple Vegetarian Ramen

If you want to make your ramen a balanced meal, I suggest you add some vegetables, protein, etc. I personally like to add:

You can include other ingredients such as mushrooms, corn or mock meat. To be honest, you only need 1-2 of these extra ingredients but I’m including more here to show you the possibilities ;).

First, I sauté the onions in a little sesame oil until they are soft and fragrant (first picture). You can use vegetable broth if you avoid oil.

Then, I added garlic, ginger and miso paste and sautéed it until it caramelized and smelled good. Sauteing these ingredients before adding all of the liquid helps intensify the flavor (second picture).

Next I added stock, tahini and soy sauce to the pot. To get a ‘thick and creamy’ soup, I blend the soup in a stick blender. If you prefer a thinner soup, you can remove all the solids from the soup (third picture).

When the soup boils, I add noodles and vegetables to cook it! 5 minutes before you serve the ramen, add your tofu to heat it up (4th picture).

You can pour soup and noodles and hope for the best. Alternatively, I prefer to use tongs or a fork to distribute the noodles and vegetables evenly. Then I pour the soup over it

The ramen can be enjoyed as is or topped with dried seaweed, chopped chives, sesame seeds and/or Japanese chili mix (Shichimi Togarashi).
