What Are The 7 Courses Of Menu – Hi everybody! We’re doing something a little different here today. A couple of months ago, I accidentally found my mother. Real life awesome food, travel, and lifestyle (and other topics) bloggers from my hometown of Charlotte, NC – Charlotte Food Bloggers! You have no idea how excited I was to find out I wasn’t alone. I live in a vacuum (under a rock) and these wonderful new friends are completely pulling me out of my work and behind my computer!
I’ve been fortunate enough to attend several events, Eat Ups, and informational/educational programs organized, coordinated, and sponsored by Charlotte Food Bloggers. This week I had the honor of being a part of a wine pairing and dinner at Cork. I can’t tell you what a wonderful experience it was. It was so fantastic I wanted to share it with you!
What Are The 7 Courses Of Menu
We arrived and were greeted with a delicious and fancy pants cocktail that welcomed Negroni’s. It’s made with white vermouth, white wine and lemon zest gin. oh! It was so herbal and refreshing!
Tasting Menu (seven Course)
After gathering at the bar, we were escorted to our dining room and introduced to Frank Wafier, one of the owners of the two houses. Over a glass of wine, he told us about his business partner, Laura Maniek, who is a master sommelier. Frank also shared his business philosophy. Here you can be completely yourself, learn about wine from the humble and friendly staff and enjoy some seriously creative, impressive and fantastic food. Not only is this a restaurant with a great wine selection with people to educate you, it’s a restaurant that’s right up there with epic Charlotte establishments. No joke. Check it out.
Here I had to photograph the beautiful table set in our private dining room. Unfortunately, I didn’t. It was a cozy and inviting room that could accommodate up to 20 people for any special occasion and/or wine pairing. I’m already imagining my next birthday. Seriously.
We had a second set menu with the same courses, but with interesting and experimental wine and/or beer pairings.
Marinated Shrimp with Sea Peas and Smoked Ricotta. oh! This ricotta is homemade and to die for.
Amazing Tasting Menu
For this course we had a wine that was completely out of this world. Man o’ War Sauvigon Blanc ’14 from Waheke Island, New Zealand. We also had beer pairings for each of the three freshman creations – Anderson Valley Brewing Co. Briny Melon Goose – California, Olde Mecklenburg Brewery Hornet’s Nest Hefeweizen – North Carolina (down the street from Charlotte and me!), Benford Brewing Co. The American IPA that solves the world’s problem is South Carolina.
Second course is veal with sauerkraut, turnips, quail eggs and cheddar chips. Now, I’ll be the first to say that raw meat is not my jam, but this was a really interesting and flavorful combination, even if the texture was unfamiliar. I loved the quail eggs, and the cheddar chips were the oddball.
This course served with Grangeneuve les Dames Blances du Sud ’14 – Gringnan-les-Adhemar, France (right?!) and Ameztoi Getariako Txakolina Rubentis ’15 – Getaria, Spain. (again! right?!)
So far you can imagine we are having a great time. It is the truth. We were. Then we went to the third course.
Menu At Navadhanya Restaurant, Cambridge
Corvina Sea Bass with Braised Radishes and Fiddler Ferns. I love me some sea bass and this was perfectly cooked. It was very tasty and I think it was my favorite on the whole menu. I will be honest. I have never had a fiddler fern before. LOVED.
They came up with Cordero di Montezemolo Arneis ’14 – Langhe, Italy for a traditional wine on this one, but Kurt Darting Pinot Meunier Trocken ’13 – Pfatz, Germany won the red. Both were very tasty and I really enjoyed taking a walk on the wild side.
You can imagine that I am getting very full right now. Then they brought out the Confit Pork Belly with pork liver, nduja, roasted broccoli, gnocchi and parmesan consommé. What are?!?!
I guess I was too busy eating this masterpiece and enjoying the wine to take a picture of the wine. Oops.
The 7 Courses Of A Formal French Meal
Next was dessert. That’s what I needed?!?! Our fifth course was Avonlea Cloth Bound Cheddar, Blueberry, Strawberry Jam on Rosemary Toast. And that little cloud thing? It tastes like cotton candy. Whaaaat?
The purpose of this is to carry the red wine left over from your last course for dessert. I’m not actually going to tell you if we have any wine left or if we need a refill….
Well, it’s the same picture, but I want you to see that there was also beer. This (13% who!) was La Perle Mondiale Strong Ale – Belgium. And it was amazing.
Everything I’ve eaten and drunk in Korkuz is delicious and the creativity there is impressive! I will be FULLY DISCLOSED here and tell you that everything I experienced in Korkbuz was for nothing, no one asked me to write about it and my thoughts are my own. Thank you, Korkbuz. I had a great time!

With that being said, Corkbuzz is the perfect place for a special occasion, dinner, or to pair your food and wine with fancy pants without anyone looking down their noses. Do it!

Loved chatting with my Charlotte Food Blogger friends: August 2, 2018: We decided to celebrate our milestone birthday this year with a tasting menu at Edulis. At Edulis, a five-course tasting menu is currently $65, and a seven-course tasting menu is currently $85.
I have had a lot of experience with tasting menus before and I really like them. I love that it’s a blind menu, which means you don’t know exactly what the dishes will be, knowing that there will be five or seven courses. This “carte blanche” menu is usually prepared according to the chef’s preferences and uses ingredients that are in season. This means that the tasting menu will be different every time you visit the restaurant. It’s a fun and exciting concept, and definitely for those who want to indulge in the finer things in life (because these tasting menus don’t come cheap).
We got a table for the three of us this Thursday night (we made a reservation less than a month ago).

When we arrived, I was surprised to find that Edulis was located in a small shop that looked like a residence. The small courtyard in front of his shop was beautiful with colorful flowers and greenery surrounding it.
Inside, I was surprised to see that the restaurant wasn’t all lit up and that there weren’t many tables for seating. There was a bar area and another small kitchen where we sat.
We were provided with “filtered Q” water for $2 per person. At the bottom of their menu there was a small sticker that said, “Thank you for not using your cell phone at the table.”
Although I was perfectly happy with the five-course tasting menu, we decided to go with the seven-course tasting menu. One of my friend’s reasons was that she would never go back to this restaurant again, so she wanted to try the “full” experience. Since the tasting menu needs to be consistent across everyone at the table, I also agreed to a seven-course tasting menu.
Menus — Little Sister
Edulis’ tasting menus are based on seafood, vegetables and wild mushrooms, which is quite different from other tasting menus which mainly contain meat proteins. The cuisine is influenced by the Mediterranean and Spain.
I can’t admire pictures hanging in a restaurant if only candles are lit during dinner service
We started with bread served with a starter of tomato paste, strained butter and olives filled with bread and anchovies. Now, given that we didn’t have a menu to tell us what we were eating (they didn’t give us a menu at the end, same with some places) and the long descriptions the server gave us were hard to follow. at the tables (it was loud that night too), I can’t remember what ingredients were used or some of the things we ate.
Another thing I don’t like about Edulis is that their lighting is so dim (candlelight only) that you can barely see what you’re eating (don’t want to).
