Yep. Nothing screams “‘Murica!” like a layer of rich, dense cheesecake sandwiched between two layers of moist, fluffy cake, ALL frosted in the creamiest vanilla buttercream! This cake has it all.

This is not the first time I have dealt with one of these heavenly beasts. I made this Cheese Candy Corn Cake almost 2 years ago and fell in love INSTANTLY. I mean, what’s not to love about a cake with a whole $$ cheesecake in the middle?? This divine creation is a dessert, and chances are, you won’t leave your Fourth of July gathering with any leftovers.

Although there are several components involved in this recipe–vanilla cake, cheesecake, and frosting–it’s actually not that difficult a dessert to make. And if you really want to, you can also replace my homemade vanilla cake with a simple boxed cake mix. I will not judge you!

To be honest, the cake is actually not that difficult to make. And I would know because I ended up making it TWICE. why? Well, my silly self had a fart brain and added double the amount of butter the recipe called for. I realized this while they were baking in the oven, so I went ahead and made another batch. It also locks in the cake’s moisture, smoothes and hides imperfections, fills the gaps between each cake layer, helps define the cake’s shape, and is a primer for other decorative buttercream designs. You may be tempted to skip this step, thinking it’s too fiddly or time-consuming. But it makes all the difference in the presentation of your frozen layer cake.

Simply put, you won’t get a professional-looking result in your finished cake if you skip this important step. Without a solid, cool base frosting, your cake can slide all over the place when you frost it and the frosting can attract large crumbs or lumps of cake.

The powder coat is also very important if you plan to frost your cake with a piping design. For example, on this chai tea cake, I frosted the cake with a powder coat first, and then cooled it well before piping on the ruffles. If you pipe the frosting directly onto the unfrosted edge of the cake, the buttercream will fall right off, which will be a disaster after all the hard work you put into making your cake. But even if you don’t pipe the final layer of buttercream, and just spread it on with an icing spatula, the powder coat does a lot to make the final result more professional, clean and attractive.

For professional results, you should frost and decorate your cake on a good quality turntable, also known as a “lazy susan”.
