What Is The World’s Sweetest Food

What Is The World’s Sweetest Food – Sweetness is an important taste associated with eating sugary foods. A sweet taste is considered a pleasant event except when it is overwhelming. There are many compounds other than sucrose that are sweet and include sugar alcohols, ketones, and aldehydes. Some compounds, such as aspartame and saccharin, have a low sweetening concentration and are used as calorie-free sugar substitutes. Sucrose is the prototype of sweetness, and all other compounds are rated relative to sucrose. A good example is fructose, which is considered 1.7 times sweeter than sucrose. The sweetest compound in the world is a protein called thaumatin.

Thaumatin is a protein known for its taste-modifying and sweetening properties. It is found as a mixture of proteins extracted from scratch

(katemfe fruits) from West Africa. Some proteins of the thaumatin sweetener family are 2000 times sweeter than sucrose. Although it is the sweetest compound in the world, its taste is completely different. Its sweetness builds slowly and lingers for a long time, leaving a licorice-like aftertaste. It is a water-soluble compound that is stable when heated or under acidic conditions. The thaumatin molecule normally binds to the tongue when eating fruit and it enhances the taste of sour foods.

A natural source of thaumatin. These fruits are cultivated locally and have been used as a beverage and food flavoring for many years in West Africa. It is a rhizomatous herb native to the rainforests of West Africa, extending from the Democratic Republic of Congo to Sierra Leone. It is an introduced plant species in Singapore and Australia.

The plant grows up to 13 feet tall, producing some huge papery leaves up to 18 inches long. The plant bears several soft fruits with numerous shiny black seeds and light purple flowers. The fruits are covered with a fleshy red aril (the central part of the fruit containing thaumatin). Apart from being used as a sweetener, the leaves and seeds of this plant have many medicinal uses.

Tate and Lyle began extracting thaumatin from these fruits in the 1970s. Unilever announced that they had extracted two proteins from this fruit, which they named thaumatin II and thaumatin I in 1990. It is approved as a sweetener in Japan, Israel and the European Union. It is only recognized as a flavoring agent in the United States.

Because it crystallizes easily and rapidly when combined with tartrate ions, a thaumatin-tartrate mixture is often used when studying protein crystallization. Its crystallization habit and solubility depend on the chirality of the added precipitate. When crystallized with meso and d-tartrate, thaumatin forms some prismatic and obtuse particles, the solubility of which increases on lowering the heat. With L-tartrate it forms bi-pyramidal crystals whose solubility increases with rise in temperature. Therefore controlling the chirality of the precipitate is crucial in the crystallization process of the protein.
