This is another whole grain flour with a delicate taste. However, too much millet flour can taste bitter, so we keep it low. It goes well with oat flour, and using two different whole wheat flours avoids stickiness.

(Not to be confused with potato flour) This starchy flour has great binding properties, but is also extremely light, so the cake rises well.

Substitution: If you don’t have potatoes, you can substitute more tapioca flour. The biscuit will be a little heavier, but it will still be delicious.
