Without a really tasty dessert option, I doubt I would have been able to stick to the low carb diet.
This is a simple bowl cake. Almond and coconut flour are gluten-free and not as starchy as wheat flour. Everything can be mixed together without worrying about mixing and making the batter hard. The only tricky part of this cake is paying attention when you take it out of the oven. It doesn’t taste good when it’s over-poured. If you’re going to make a mistake (I’m speaking from experience here) – slightly underbaked is better than overbaked. I’m including detailed instructions on how to judge commitment so that your effort is successful the first time!

First things first, prepare the frosting. You’ll want to follow each step up until you’re ready to hit the frosting. Do not frost until your cake is cool and ready to frost.
I start every recipe by preheating the oven, then preparing my baking pan. Go to your oven and preheat it to 350°F. Coat your cake pans with coconut oil. Then, dust with cocoa powder until completely covered. Or, use a circle of parchment paper in the bottom of the pan.
Place a large mixing bowl and sift together your dry ingredients: gluten-free oat flour, cocoa powder, baking soda and salt. Set it aside for later.
Add the water and milk to a microwave-safe bowl. You will heat the two ingredients together until hot – this will prevent the melted coconut oil from solidifying when it touches these drinks.
Amazing Paleo Chocolate Cake (gluten Free, Dairy Free)
Place a medium mixing bowl and add in all the wet ingredients: hot water and milk, melted coconut oil, coconut sugar, maple syrup and vanilla. Whisk all the wet ingredients together until well mixed. Now, pour the wet ingredients into the dry ingredients bowl. Be sure to use a rubber spatula to scrape the bowl of wet ingredients clean. Now, mix the wet and dry ingredients together until there are no lumps of flour. You just made your own vegan gluten free cake batter!
Remove the pans from the oven and cool for about 25 minutes in the pan, but on a cooling rack. Then, gently remove the cakes from the pan and send directly to the cooling rack to finish cooling, about 1 hour.
Now, it’s time to hit the frosting! Beat until creamy and smooth, then frost the cake, slice and enjoy the ultimate gluten-free vegan cake!

To store after frosting: store your cake in an airtight container like this one for 1-3 days, in a cool place. Keep away from direct sunlight and heat sources.

To store ahead of frosting: you can freeze the cake and frosting before serving (up to 3 days in advance). Wrap the cake layers in parchment paper or plastic wrap and store in an airtight, freezer-safe container. Don’t make the frosting until you’re ready to whip up and frost the vegan chocolate cake.
I designed this recipe specifically around the ingredients and numbers listed. If you make any substitutes, the recipe is different and I cannot guarantee the results. Any small change, even changing the powder from one to another, can cause bad results. And definitely don’t use almond flour, coconut flour or any other type of flour expecting good results. All those flours work very differently in this recipe. 🙂
It is difficult to grind home-made oat flour to the level of large companies with quality equipment. So, if you’re making your own, be sure to sift out the coarse particles that can cause your chocolate cake to turn brown, or too moist. Then, after filtering, measure your oat flour and use.
Start with a little mild coconut oil. Place about 2 teaspoons in the cake pan. Using a rubber spatula, spread the coconut oil. The more you spread, the softer and easier the coconut oil will work with.
