I’m a big fan of potato wedges, baked potatoes, and french fries, but these crispy mashed potatoes might be my favorite potato yet. They have beautiful crispy skins, comfortingly creamy middles, and a delicious garlic-parmesan flavor that I’m sure no one can get enough of.
In proportion, they are suitable for many different occasions. Top them with chipotle sauce, and they make a mouth-watering game day snack. Sprinkle them with fresh herbs, and they’ll be a crowd-pleasing Thanksgiving side dish. The main thing is that you don’t have to choose! Once you try this mashed potato recipe, you’ll come back to it again and again.
Mini Stuffed Potatoes Recipe — Bite Me More
I like to think of this recipe for mashed potatoes in three parts: boil, mash, and bake. Here’s how it goes:
Boil it first. Place the potatoes in a large pot, and cover with an inch of cold water. Add 1 teaspoon of salt and bring to a boil. Cook until the potatoes are done
Next, smash them. While the potatoes are boiling, brush 2 large baking sheets with olive oil. that’s right! My default is to use parchment paper, but I don’t recommend using it here. Baking the potatoes directly on the oiled sheet helps them to be especially crispy on the bottom.
When the potatoes are soft, peel them and place them on a greased baking sheet. Use the back of the gauge to carefully press until they are about 1/4-inch thick.
Easy Smashed Potatoes
Finally, bake! Roast the potatoes until golden brown and crisp around the edges, 25 to 35 minutes, rotating the plates halfway through.

Homemade Baked Potato Skins Recipe
Mashed potatoes are typically peeled and all the potatoes are mashed together until relatively smooth, often with butter and sometimes milk.
Potatoes are unpeeled, parboiled and then cooked in the oven again with herbs, garlic and a little oil (or butter if you prefer) until super crispy and absolutely delicious!
I’ve tried Yukon Gold, Red Potatoes, and Russet Potatoes along with several varieties and they’ve all done well.
In general, mashed potatoes work better than waxed potatoes, but if you don’t have powdered potatoes on hand, I think you can try whatever you have in your fridge.
Oven Roasted Potatoes Recipe
And no matter what kind you have, don’t forget that the humble spud is an excellent source of vitamin B6 and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber and pantothenic acid. Ate them all!! 🙂
Step 1: Preheat the oven, you want it hot and hot as soon as the potatoes are ready to go into the oven.
Step 2: Boil the potatoes, and be sure not to overcook them, we want them cooked, not soft and mushy.
Step 3: While the potatoes are cooking, combine the oil, minced garlic and herbs and have them ready to go.

Step 4: Pour the prepared potatoes, place them on a baking sheet and use a potato masher or a fork to ‘break’ them and use a fork to break the tops.
Step 5 When they are still hot, spoon or brush garlic oil over each potato and return to the oven and cook until tender.
Remember to serve them hot as they don’t stay crisp for long after they start to freeze.
