It’s that time of year when summer hits and certain elements start to appear everywhere For example, how do you manage the overflow of zucchini?

I usually make this zucchini roti with pineapple to start the season Lots of bread that I freeze and give to family But I am always looking for new zucchini recipes

A simple cake For starters, it uses oil instead of butter This in itself makes for an easy batsman

Vintage Kitchen Tips: Always grate the zucchini at the last minute and with a grater with a large hole. This will loosen the liquid before mixing it into the cake batter But, if it leaves water, squeeze it before adding it to the egg mixture

Cream Cheese Glaze: This is an alternative to the above I like to use a fluid cream cheese glaze, which is what I use in my banana bond cake recipe. It’s thinner than regular so it lets the zucchini cinnamon flavor shine through the cake.

I use this microplane extra coarse grater because it is easy to clean and use You can also shred it with the shredder attachment or blade in a food processor Be careful when using a metal blade so that you don’t turn the vegetables into mush.

Just squeeze it with your hands before adding it to the batter The reason I recommend grating or tearing it at the last minute is to prevent this

In this simple carrot cake recipe, I give the option of using zucchini Or you can use carrot for cumin bread with pineapple Make sure you grate it at the last minute and with a large hole grater
