If you’ve never made chocolate cake with vegetables before, now is the time. Adding zucchini to chocolate cake is a sneaky way to hide greens. You won’t be able to taste it, and it adds extra moisture to the cake.

For a healthy chocolate zucchini cake, you’d be surprised how good it is. The texture is very moist, with a soft crumb. You won’t taste an ounce of zucchini at all, just a rich chocolate flavor. Seriously, these are the best cakes ever.

Unlike most cakes, this one doesn’t contain eggs, butter, and oil, but you never know. To compensate, we use unsweetened applesauce (a great substitute for butter and eggs). Instead of wheat flour, oat flour is used. While I enjoy making my own, I actually use a store-bought version for this cake. This is because the grind is finer and the texture is lighter.

This chocolate cake with zucchini is easy to make: the only thing you need to remember is to let the milk and vinegar sit for 5 minutes to thicken and create the buttermilk. You can make it as a two-layer cake (using two 8-inch cake tins) or a three-layer cake (using three 6-inch cake tins).
